Origin

Sambhar is a South Indian staple made with a mix of lentils and vegetables, with tamarind to add sourness and a special spice mix that brings it all together to give a unique flavour. But the popular South Indian Dal is known to have originated in the kitchens of Thanjavur Maratha ruler Shahuji. It was an experiment he tried and named it after the guest of the day, Sambhaji, the second Maratha Emperor.

Cooking Uses

Apart from adding it to Sambhar you can also use it to curries, stews, and vegetable dishes towards the end for that typical South India flavour.
